This recipe has been adapted from Jamie Oliver’s recipe. He uses just cherry tomatoes in his recipe, but when we have a glut of our own tomatoes I just chop up larger tomatoes and pop them in too.
This is delicious served with mashed potatoes, or keep it even simpler and serve with some crusty bread and a salad.
Ingredients: (serves 3)
- 1 kg. mixed colour tomatoes – cherry or large ones cut to size
- 1 sprig thyme and rosemary
- 1 bay leaf
- 2 cloves of garlic peeled and chopped
- 1 pack of our sausages – cut the sausages into bite size pieces.
- Olive Oil
- Balsamic Vinegar
- Salt and Pepper
Method:
Preheat oven to 180 deg.
Use a dish that will take the tomatoes in one layer. Pop in your herbs and your garlic. Place the sausages on top.
Drizzle with olive oil and balsamic vinegar. Toss it all together, making sure the sausages stay on top.
Bake in the oven for half an hour. Take out your dish, give the tomatoes a bit of a stir, and turn over your sausages. Put back in oven for another 10 to 15 minutes.
Serve with crusty bread, salad, and of course, a glass of wine!
Costing per person: We used our own tomatoes and baked our bread… but I’d guess buying all ingredients, including using our sausages, the cost would be €3 per person.
