Irish Sausage Casserole

We’ve been trawling through some old magazines looking for new recipes to try out and to share.  This one has been adapted from a recipe in BBC Good Food magazine.

Serves 2 for dinner, or 4 as lunch.

Oldfarm sausage and borlotti beans

Oldfarm Sausage Casserole

Ingredients:

  • 2 tsp olive oil
  • 4 large meaty sausages
  • 1 onion sliced
  • 1 clove of garlic, chopped or minced
  • 2 carrots, finely chopped
  • 2 celery sticks, finely chopped
  • 400 g can of tomatoes
  • 400 g can of Borlotti beans (or any variety of beans) (do not drain) the Borlotti beans add a nice ‘smokey’ flavour to the dish.
  • 1 beef stock cube
  • 1 tbsp thyme

Method:

Heat a tablespoon oil in a pan and fry your sausages until browned and cooked through.  Remove from pan.  Allow to cool and chop into chunks.

Add the remaining oil to the pan and fry your chopped onion, garlic, carrots and celery and cook for 10 minutes or until softened.

Stir in the tomatoes, and the beans including their juice, crumbled stock cube and chopped thyme.  Return the chopped sausages to the pan.

Cover and simmer for 10 minutes.

Serve with crusty bread or garlic bread.

Approx. cost using Oldfarm sausages = €6.00
