Oldfarm Pork Burger

Over the past couple of years Alfie has been developing his now almost famous pork burger. It has taken much tweaking and adjusting but now it is ready to be revealed to you.  We hope you do try it.  Let us know what you think of it.

Irish Pork Burgers with salad

Ingredients:

  • 450 gr minced pork – coarse ground shoulder or neck fillet
  • 30 gr breadcrumbs or porridge oats
  • 1 medium red onion
  • 1 medium egg
  • 2 gloves garlic
  • 1/2 tsp mustard seeds (ground) or powder
  • 1/2 tsp chilli flakes
  • 1/4 tsp ground coriander
  • 1/8 tsp ground cloves
  • 1/4 tsp turmeric
  • 1/2 tsp fennel seeds – ground
  • Salt and Pepper to taste

Method:

Toast all the spices prior to grinding.

Saute the onion, and allow to cool.

When onion is cool add all the ingredients together.  Mix well.  Form into burgers – thickness depends on your own preference.  We usually make them into 125 g burgers.

Ideally store in the fridge over night, this allows the flavours to develop.  Remove from the fridge and allow to reach room temperature before cooking.

The 125 gr. burgers can be barbecued, or fried, for 4 minutes each side.

Serve simply with a nice salad.
