In honour of St. Patrick’s day 2013 we held a competition over on our blog asking folks to submit a ‘bacon’ recipe that they would be willing to share.
This was the winning recipe…. it is delicious.
Irish Bacon and Cabbage Soup
Paul says he doesn’t really measure he just goes by taste and eye. 🙂
5 smoked streaky bacon diced
1 cup of potatoes diced
1 cup of plum tomatoes diced
2 cups Savoy cabbage diced
1 tablespoon Oregano
1 onion diced
2 garlic cloves crushed
1 tablespoon butter
300ml of homemade chicken stock
salt and ground black pepper
Method:
First melt the butter in a heavy based saucepan, add the bacon onion potato and garlic
over a medium heat for 10 minutes.
Then add your stock tomatoes and oregano and bring to the boil.
Then add your cabbage and simmer for 5-10 minutes depending on how tender you like
your cabbage.
Season to taste.
So quick, so simple, so tasty!!!
